Since 2014, breeding of large grey snails on 500 M2 in the family farm located at the foot of Petit Salbert on the outskirts of the village in a wooded setting.
The snails are processed on the farm in a farm laboratory. Stuffing recipes are homemade and fresh. You'll find snails in shells (Burgundy recipe), in shells in pastry with fillings made with Comté cheese, Savagnin cheese, Morbier cheese, Munster cheese, wild garlic and, of course, Burgundy recipe snails, which are prepared frozen. In tins, I prepare snails in court-bouillon ready to be added to a recipe, as well as snail spreads.
